How cute are these eggwiches? They are easy to make and can be layered with your favorite ingredients: greens, tomato slices, pickles, cheese, and even flavorful spreads…the options are limitless! Serve these as a fun appetizer at a summer barbeque or pack them for a picnic in the park.

4 Large Hard-boiled eggs, peeled
1 Leaf Romaine lettuce, cut into 4 pieces
4 Slices Ham, salami, or prosciutto
4 Slices Pickles
1 Slice Cheese (such as pepato, cheddar, gruyere, pecorino, etc.), cut into 4 squares

Directions

  1. Slice off a small piece from the bottom of each egg, so that it will stand up. Then, slice each egg in half, lengthwise.

  2. Layer remaining ingredients on the bottom half of each egg boiled egg, then add the top half of the egg.
